The Gentile pasta factory is the oldest in the city of Gragnano.
The origin of "Gentile" goes back to 1876. The name derives its name from the property at the time. The Zampino family acquired the brand in the 1980s.
The production of pasta, to which pasta maker Natale Zampino has been dedicated since day one, initially focused on "handmade fusilli", the famous format made with a hanger and slowly dried before being used in the kitchen. Later, as the company grew, they also dedicated themselves to other long and short pasta shapes.
The "Cirillo method" is a drying process based on the possibility of recreating the same phenomenon of natural drying in pasta factories. Here, the heat of the sun and the power of the wind are exploited.
In the town of Gragnano there is still the so-called "macaroni street", today's Via Roma, where the pasta was spread out in the sun and dried for days.
